Lebanese Fruit Cocktail w/ Ashta

Ingredients

For the avocado layer:

  • 4 ripe avocados
  • Splash of milk
  • Squeeze of honey

For the Banana/Mango layer:

  • 2 large mangoes
  • 1 ripe banana
  • Splash of milk
  • Squeeze of honey

For the strawberry purée:

  • 250 g punnet strawberries
  • Squeeze of honey

To serve:

  • Ashta (see notes) can substitute for thick ricotta
  • cashews
  • pistachios
  • honey

Instructions

  1. To layer: add avocado on the bottom as it’s heavier. Add fruit salad, mango/banana purée & strawberry purée.

Notes

See Ashta recipe by searching ‘Ashta’ in the search bar, or use store bought.
This makes approx 2 large glasses or 3 medium glasses.
Taste & adjust purées to your own preference, if you like it runny add more milk, sweeter add more honey.
You can alternatively use condensed milk as a sweetener or sugar.
Purees can be made ahead & assembled before serving.
Can also be served in dessert bowls.
