Ingredients
- 1 1/2 cups chopped pitted dates
- 1 cup boiling water
- 1 teaspoon bicarb
- 100g chopped butter
- 3/4 cup Brown sugar
- 2 eggs
- 1 cup S/R flour
Sauce
- 120 g chopped butter
- 250 ml thickened cream
- 1 1/2 cups of brown sugar
Instructions
- Place chopped dates In a bowl with the 1 cup of boiling water & the bi-carb. Stand for 5min.
- Add the dates with the water into a food processor with the butter & sugar, blitz until combined.
- Add the flour & the eggs, blitz again until fully incorporated.
- Place in a greased cupcake tin, or loaf tin, or cake pan. Bake for approx 30min in a 180 preheated oven. (May need longer if baking in a cake tin)
Sauce:

Combine ingredients in a small pot & stir until fully incorporated & melted. Simmer gently for 5 min. Serve over warm puddings.
