Sticky Date Pudding with Butterscotch Sauce

Ingredients

  • 1 1/2 cups chopped pitted dates
  • 1 cup boiling water
  • 1 teaspoon bicarb
  • 100g chopped butter
  • 3/4 cup Brown sugar
  • 2 eggs
  • 1 cup S/R flour

Sauce

  • 120 g chopped butter
  • 250 ml thickened cream
  • 1 1/2 cups of brown sugar

Instructions

  1. Place chopped dates In a bowl with the 1 cup of boiling water & the bi-carb. Stand for 5min.
  2. Add the dates with the water into a food processor with the butter & sugar, blitz until combined.
  3. Add the flour & the eggs, blitz again until fully incorporated.
  4. Place in a greased cupcake tin, or loaf tin, or cake pan. Bake for approx 30min in a 180 preheated oven. (May need longer if baking in a cake tin)

Sauce:

  1. Combine ingredients in a small pot & stir until fully incorporated & melted. Simmer gently for 5 min. Serve over warm puddings.
