Rocky Road

Ingredients:

  • 2 blocks chocolate of choice, approx. 180-200g each
  • 1/2 cup chopped peanuts
  • 1 280g bag marshmallows, if they're big cut them into smaller peices 
  • 1/2 cup desiccated or shredded coconut
  • 1 bag raspberry lollies 

Optional Additions - if adding these also melt another block of chocolate 

  • 1 cup roughly broken pretzels
  • 10 roughly crushed plain biscuits or biscuit of choice 

Method:

  • Line your brownie tin with baking paper, letting it hang over all sides.
  • Combine all fillings except chocolate in a bowl. Chop up the blocks & melt them in 30 seconds blitz stirring in-between until melted & smooth.
  • Add this to the rest of the ingredients & give it a mix.
  • Pour into lined tin & set aside to harden for a few hours. Cut into chunks & enjoy!

Note 

  • These measures are approx, play around to suit your preference
  • Add whatever you like, this recipe is customisable 
  • This recipe makes a rectangle size brownie tin
