Ingredients
- 2 quartered chickens (8 peices)
- 1 large red onion, sliced chunky
- 1 lemon sliced
Dressing/Marinate
- 2 tablespoons Za’atar
- 1 teaspoon sumac
- 1/2 teaspooon Paprika
- 1 teaspoon chicken stock powder
- 1/2 teaspoon Lebanese 7spice
- 1/2 teaspoon black pepper
- 4 crushed garlic
- Juice of 1 lemon
- 1/4 cup olive oil
- 1/4 cup vinegar
- 1/2 cup water
- Salt & Pepper
Method
- Whisk marinate ingredients together & pour over chicken, sliced lemons & sliced onions. Marinate for 1hr.
- Roast chicken skin side up in a 200c oven uncovered (with the marinade) for 30 minutes, baste the chicken in the juices & continue roasting for another approx 25min or until golden & cooked through.
- Garnish with parsley & serve with your favourite salad, bread or rice dish.
