Lebanese Spanegh w Rizz (Spinach & Rice)

  • x2 family bags baby spinach 280g each
  • 500 g lamb or beef mince
  • 1 finely diced onion
  • 6 large crushed garlic
  • 1 bunch finely chopped coriander
  • 1 teaspoon Lebanese 7 spice
  • Juice of 4 large lemons or to taste
  • 1/2 cup toasted pine nuts
  • Salt
  • Vermicelli rice & plain yoghurt to serve

Instructions

  1. Sauté the onions in olive oil for a few minutes, add the mince & start browning.
  2. Add garlic & coriander, cook for a minute. Add the spinach, but don’t mix, just add the lid & allow spinach to wilt for a few minutes.
  3. Now you can mix & add salt & teaspoon of 7spice. Cover & cook on low for about 15 minutes. Check for juices, if you like you can add approx 1/4 cup of water if you feel like its dried out.
  4. Towards the end of cooking throw in your pine nuts. Add the lemon at the end of cooking & taste for seasoning.
