Easy Eggless Tiramisu

Ingredients

 

  • 1 packet Italian sponge fingers
  • 600ml thickened cream
  • 250g Mascarpone
  • 1 teaspoon vanilla extract
  • 3 heaped tablespoons sifted icing sugar
  • 1 heaped tablespoon instant coffee dissolved in 1/2 cup boiling water 
  • 1 & 1/2 cups cold water 
  • Chocolate shavings or crushed flake (optional)

Method

  • Dissolve the coffee in boiling water in a deep dish, add the cold water & set aside.
  • Whip the thickened cream with vanilla & sugar.
  • Add mascarpone & whip for another minute, making sure not to over whip.
  • Dip fingers into coffee & layer into the dish or cups, add cream layer then a sprinkle of chocolate. Repeat x2 or x3 depending on your dish. Dust with cocoa powder & dark chocolate shavings.
  • Refridgerate for minimum of 4 hours.
