Ingredients
- 1 packet Italian sponge fingers
- 600ml thickened cream
- 250g Mascarpone
- 1 teaspoon vanilla extract
- 3 heaped tablespoons sifted icing sugar
- 1 heaped tablespoon instant coffee dissolved in 1/2 cup boiling water
- 1 & 1/2 cups cold water
- Chocolate shavings or crushed flake (optional)
Method
- Dissolve the coffee in boiling water in a deep dish, add the cold water & set aside.
- Whip the thickened cream with vanilla & sugar.
- Add mascarpone & whip for another minute, making sure not to over whip.
- Dip fingers into coffee & layer into the dish or cups, add cream layer then a sprinkle of chocolate. Repeat x2 or x3 depending on your dish. Dust with cocoa powder & dark chocolate shavings.
- Refridgerate for minimum of 4 hours.
