Ingredients
Marinate:
- 1.5 kg Chicken breast schnitzel fillets
- 1 tablespoons lemon pepper seasoning
- 1/2 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt
Cream sauce:
- 1 small finely diced onion
- 4 crushed garlic
- 1 cup chicken stock
- 600 ml thickened cream
- 1 heaped teaspoon wholegrain mustard
- 1 heaped teaspoon dijon mustard
- Zest & juice of 1 lemon
- 1 small jar washed & drained capers
- Small handful fresh chopped chives
- Salt & black pepper
Instructions

Coat chicken with the oil & seasonings on both sides. pan fry on both sides until golden & set aside.

In the same pan, sautee the finely diced onion in butter + olive oil for a few minutes, add garlic & cook until fragrant.

Deglaze the pan with chicken stock then add the cream, mustards, capers, lemon juice/zest & chives.

Season well before adding your grilled chicken & heat through.
