Creamy Dijon Lemon Chicken

Ingredients

Marinate:

  • 1.5 kg Chicken breast schnitzel fillets
  • 1 tablespoons lemon pepper seasoning
  • 1/2 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt 

Cream sauce:

  • 1 small finely diced onion
  • 4 crushed garlic
  • cup chicken stock
  • 600 ml thickened cream
  • 1 heaped teaspoon wholegrain mustard
  • 1 heaped teaspoon dijon mustard
  • Zest & juice of 1 lemon
  • 1 small jar washed & drained capers
  • Small handful fresh chopped chives
  • Salt & black pepper

Instructions

  • Coat chicken with the oil & seasonings on both sides. pan fry on both sides until golden & set aside.
  • In the same pan, sautee the finely diced onion in butter + olive oil for a few minutes, add garlic & cook until fragrant.
  • Deglaze the pan with chicken stock then add the cream, mustards, capers, lemon juice/zest & chives.
  • Season well before adding your grilled chicken & heat through.
  • Serve with pasta, rice, mash etc
