Easy Curried Veggie Rice

Ingredients

  • 500 g small diced chicken optional, can leave this out & keep it vegetarian
  • 1 finely chopped onion
  • 2 cloves crushed garlic
  • 1 teaspoon ginger paste
  • 2 cups frozen mixed veggies
  • 2 cups of long grain rice
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon chicken stock powder
  • Salt to taste
  • Olive oil/Butter

Instructions

  • Brown off chicken in some olive oil until water evaporates, add onion & sautée few minutes before adding garlic, ginger, spices + stock powder & veggies.
  • Cook until fragrant, add rice and cook off for a minute adding 4 cups of hot water, season with salt. Bring to a boil then cover and reduce heat to lowest. Cook for 18-20 minutes.
  • Serve with salad or a dollop of yoghurt.
