Ingredients
- 500 g small diced chicken optional, can leave this out & keep it vegetarian
- 1 finely chopped onion
- 2 cloves crushed garlic
- 1 teaspoon ginger paste
- 2 cups frozen mixed veggies
- 2 cups of long grain rice
- 1 teaspoon curry powder
- 1/2 teaspoon turmeric powder
- 1 tablespoon chicken stock powder
- Salt to taste
- Olive oil/Butter
Instructions

Brown off chicken in some olive oil until water evaporates, add onion & sautée few minutes before adding garlic, ginger, spices + stock powder & veggies.

Cook until fragrant, add rice and cook off for a minute adding 4 cups of hot water, season with salt. Bring to a boil then cover and reduce heat to lowest. Cook for 18-20 minutes.
- Serve with salad or a dollop of yoghurt.
