Chicken Avocado Salad

Ingredients

  • 2 chicken breast fillets
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder 
  • Salt & pepper
  • 2 tablespoons olive oil
  • Coat well grill or pan fry then slice.

Dijon/Honey Vinaigrette

  • 1 heaped tablespoon dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons lemon juice or vinegar
  • Salt pepper

Instructions

  • Drizzle diced pumpkin with honey, olive oil salt & pepper. Roast until golden, cool.
  • Add chicken & pumpkin to baby spinach, rocket, cherry tomatoes, quartered beetroot (canned), sliced avocado, spanish onions & walnuts.

Dijon/Honey Vinaigrette

  • Whisk well and while whisking slowly add in a stream approx 1 cup olive oil until it emulsifies.
  • Taste and adjust seasoning if needed.
