Ingredients
- 2 chicken breast fillets
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt & pepper
- 2 tablespoons olive oil
- Coat well grill or pan fry then slice.
Dijon/Honey Vinaigrette
- 1 heaped tablespoon dijon mustard
- 2 tablespoons honey
- 2 tablespoons lemon juice or vinegar
- Salt pepper
Instructions

Drizzle diced pumpkin with honey, olive oil salt & pepper. Roast until golden, cool.

Add chicken & pumpkin to baby spinach, rocket, cherry tomatoes, quartered beetroot (canned), sliced avocado, spanish onions & walnuts.
Dijon/Honey Vinaigrette

Whisk well and while whisking slowly add in a stream approx 1 cup olive oil until it emulsifies.

Taste and adjust seasoning if needed.
