Beef, Noodle & Tomato Soup

Ingredients

  • 250g beef mince
  • 1 onion
  • 1/2 a cup vermicelli noodles
  • 1 tablespoon tomato paste
  • 1 tablespoon capsicum paste
  • 1/2 teaspoon Lebanese 7spice
  • 1 beef OR chicken stock cube 
  • 1 teaspoon dry mint
  • Salt & pepper to taste

Method

  • Finely chop the onion & cook in some olive oil until soft. 
  • Add the mince & cook until browned. Add the tomato paste, capsicum paste & stock cube. add the 7spice & dry mint. 
  • Cook for a few minutes before covering with approx. 1 litre of hot tap water. 
  • Bring to a boil before throwing in your vermicelli noodles. Simmer gently until noodles are cooked, adding more water if needed.
