Thai Inspired Sticky Chicken Wings

Ingredients

  • 1.5 kg chicken wingettes/drumettes
  • 1/2 cup sweet chilli sauce
  • 1/4 cup honey
  • 1/4 cup Sriracha
  • 2 tablespoons brown sugar
  • 1/4 cup white vinegar
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • Juice of 1 lime
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 tablespoon lemongrass paste

Instructions

  • Season your chicken with salt & pepper. Whisk the sauce ingredients in jug, pour half the sauce over the chicken & mix well.
  • Marinade for minimum 2 hours. Preheat oven to 200c. Line baking tray with baking paper & place a wire rack ontop, this ensures your chicken comes our crispy & doesn’t stick to the pan. Place chicken skin side down. Bake for 20 minutes then brush on some reserved sauce. Back in the oven for 10 more minutes.
  • Turn chicken wings & brush on some more sauce then back into the oven for 20 minutes. Remove & baste 1 more before finishing off in the oven for 10 minutes.

Total basting 3 times.

Total cook time: Approx 1 hr

    • Serve garnished with spring onions & crushed peanuts! Optional serve remaining sauce on the side.
