Ingredients
- 1 kg chicken breast sliced
- 2 sliced onions
- Sliced capsicums red, green & yellow
- 300 g sliced mushrooms
- 1 can corn kernels washed & drained
- 1 cup mozzarella cheese
Marinate:
- 1/2 cup olive oil
- 1/4 cup lime juice
- 1 Teaspoon each of Cumin Chilli Flakes, Paprika, Oregano, Salt, Black pepper, Garlic powder, Onion powder, chicken stock powder, Cayenne pepper, smoked paprika
Avocado Sauce
- 3 ripe Avocados
- 2 garlic cloves
- Juice of 1 lime
- Salt & pepper
- 1/2 cup whole egg mayo
- Pinch of coriander leaves
Instructions

Marinate chicken for 2 hours. Heat pan & cook until chicken is sealed, add the onions & capsicums. Cook for 5 minutes then add the mushrooms. Cook for another 5minutes before adding corn. Turn off the heat & stir through the mozzarella.

For the sauce – in a small food processor add the avocado with the garlic, lime juice & salt/ pepper. Blend until smooth. Add the mayonnaise & blend for another 30secs until mixed through. Taste for seasoning.

To serve – spread sauce onto bun, top with Fahita filling, we also like to add lettuce.
