Chicken Shawarma Loaded Rice

Ingredients

  • 1 kg chicken breast strips
  • 1 tablespoon shawarma spice
  • 1 teaspoon chicken spices or your favourite poultry seasoning
  • 1/2 teaspoon sumac
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Black pepper & salt
  • 1 tablespoon greek yoghurt
  • 2 tablespoons vinegar
  • 2 tablespoons canola oil

Tahini sauce

  • 1 small crushed garlic
  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • Salt
  • Water to thin if needed
  • Pinch of Paprika

Yellow Rice

  • 2 cups basmati rice
  • 1 small diced onion
  • 2 crushed garlic
  • 1 teaspoon turmeric
  • 1 chicken stock cube
  • Salt

Instructions

  • Whisk marinate ingredients together, pour over chicken & marinate minimum 4 hours.
  • Pan fry chicken until cooked and golden, serve over yellow rice (shown) Garnish with pickles of your choice, Drizzle tahini sauce & garnish with parsley. Serve immediately

Yellow Rice

  • Sautee onion in olive oil, add garlic, turmeric, stock cube & washed rice. Season & bring to the boil. Cover & reduce heat to lowest, cook for 18 minutes.
